Made exclusively from the Côte des Blancs Chardonnays (Vertus, Cramant, Avize, Oger), mostly from the 2007 vintage. The proportion of reserve wines (coming from several previous vintages) is about 40%. The natural alcoholic fermentation (natural yeast) and the malolactic fermentation begin spontaneously in our temperature-controlled, stainless-steel vats. The wines are left on their lees during the winter. The reserve wines are stored in casks and in wooden vats. The wines are blended and bottled in May, after being very lightly strained. The bottles are then taken down into our cellars and horizontally stacked. The second fermentation and the maturation 'on laths' quietly take place in the coolness of our cellars. All the bottles are disgorged manually 3 to 6 months before being marketed. The dosage is 4 grams per litre (it is extra-brut).

 

According to Antonio Galloni: “The NV Brut Blanc de Blancs Premier Cru shows terrific balance of minerality with a round expression of fruit. The wine possesses superb intensity all the way through to a long, creamy finish that lingers on the palate with substantial length. This is high-class juice. The Blanc de Blancs Premier Cru is 60% 2006 and 40% reserve wines from 2005 and 2004 from vineyards in Vertus, Cramant, Avize and Oger. Savvy readers will notice that the last three of these are actually Grand Cru villages, but the presence of Vertus, a premier cru village in the blend, forces the estate to label the wine as Premier Cru. The wine was vinified in a combination of cask and steel with indigenous yeasts. This bottle was disgorged in May 2009 and dosage was 5 grams per liter. Once again I was blown away by the wines I tasted from Larmandier-Bernier. These are some of the purest and most exquisite wines readers are likely to come across. Larmandier-Bernier practices biodynamic farming and the wines all see minimal levels of dosage. Simply put, I can’t recommend the wines highly enough.”
