Grape(s): 85% Syrah, 15% Viognier.

 Vines situated above the town of Chavany but out of the AOC zones are used for this cuvée. “Signé” is not the name of a specific place but comes from the contraction of Syrah and Viognier. Shallow granite soil. Vines are planted in high density, and treated without insecticides of pesticides; the number of treatments are restrained according to the weather. Low yields, effeuillage, green harvests for a better maturity of the raisins. Manual harvest, and in the cave, rigorous sorting, pressing of the grapes, de-stemming. Fermentation in open tank with natural yeast. Aged 8 months in barrels.

A flattering nose of red fruits and flowers, in the mouth round and delicate, silky tannins. Accompanies delicate meat or fish, “thon à la provençal.”
