 A selection of the best vines above the town of Chavanay are used for the Syrah “Les Candives” cuvée. The name “Les Candives” is not the name of a specific place, but rather the local name used for syrah. Shallow granite soil. Vines in the presence of weeds in order to prevent against soil erosion. Low yields, effeuillage, and green harvests all take place. Manuel harvest, and in the cave, rigorous sorting, éraflage, stomping of grapes occurs. Alcoholic fermentation in open tanks, then maceration for approximately 2 weeks. Fermentation occurs using native yeasts. Ageing 8 months in barrels. Production: 10.000 bottles.

A wine with a profound color, on the nose, aromas of black fruits and spices. In the mouth it is round and well-balanced, with well-integrated tannins and a long finish. Accompanies dishes with sauces, “risotto au vin rouge et aux lardons.”
