VINIFICATION

Method:

Over matured handpicked grapes were placed in cold room overnight. Then the destemed grapes remained in skin contact for 12 hours. The must fermented with indigenous yeasts at 18˚C. The wine matured in oak barrels of different capacity for 12 months. Unfiltered bottling.
