Terroir: This cuvée comes from the three terroirs of Aubance.

Winemaking: The 3 schistes is the result of several selections picked on the three noble terroirs of the estate. The roted harvest had a potential alcohol level of 22.7% on the vine. The bunches or the part of bunches have been hand picked in 25kg buckets, in order to avoid every alteration. The press is slow and long, and no enzymes, sugar, or yeast is added. The wine's fermentation process is carried out in oak barrels.

Ageing: Oak barrels from 2 to 6 years.

Analysis: Alcohol 11%, AT 4.02, pH 3.56, residual sugar: 167.6 grs/L

Tasting Notes: In its youth, this wine shows a yellow colour with golden glints, offering a rich bouquet of fruits. Marmalade of quince, apricot, passion fruit, and pineapple, in mouth is tasted a touch of honey and citrus. The wine is a perfect expression of the terroir in all its elegance, retaining maximum freshness, as it is also quite mellow and delicate in the mouth, which are some of the notable characteristics of the 3 schistes. It's a perfect balance between sweetness, acidity, and vivacity. The wine can be aged a very long time.
