The cuvée “Les Peyrouses” comes from granite hillsides from the northern part of the Rhone valley. Manuel harvest is undertaken, and the vinification is similar to that in Cornas, with a maceration of 3 weeks and regular “pigeages,” as well as the de-stemming of grapes. Ageing occurs for 12 months in barrels 2 to 3 years old.

Its appearance has a purple color, with an intense nose of ripe cherries. The fruit is noticeable in the mouth with licorice notes that are lightly peppered. The taste is very round with soft tannins. This syrah possesses lots of freshness and finesse with a beautiful tannic structure. Food Accompaniment: A wine that will be at its best in 2 to 3 years, “sur de la charcuterie, des grillades, et sur toute viande rouge grillé.”
